Adjust rack to top position and preheat oven to 425 degrees. Wash and dry all produce. Dice @potatoes{32%ounce} into 1/2-inch pieces. Return potatoes to the pot and keep covered off heat until ready to mash.

While potatoes cook, heat a dry #medium pan{} over medium-high heat. Add @bacon{8%ounce}; cook, turning occasionally and adjusting heat if browning too quickly, until crispy, ~{6-10%minutes}. Turn off heat; transfer bacon to a plate lined with @paper towels{}. Wipe out pan. Once cool enough to handle, roughly chop the bacon.
